Weekly Menu 8/13 - 8/19



This was a picture of my plate from last week when I made spaghetti, cornbread, and green beans one night. As you can see, the picture was an after thought after I'd already dug in! ☺ That cornbread by-the-way was the best cornbread (gluten free and dairy free) I've ever made. I was inspired by a recipe out of a new cookbook and I just can't wait to make it again this week. Not only did I really like it but I was "pleased as punch" because the rest of the family gave it rave reviews too!


Mon

B Cold cereal (we like Chex cereal because they're GF)

D Pancakes, bacon

Tue

B Steel cut oats flavored with peanut butter and honey
L Chips and cheese
D Spaghetti, cornbread, veggie, dessert

Wed

B Cold cereal

D Chicken and gravy over rolls, veggie

Thur

B Steel cut oats flavored with peanut butter and honey
L Ground beef tacos
D Muffins, bacon

Friday

B Cold cereal
L Omelets
D Chicken and veggies with oven fries

Sat

B Steel cut oats flavored with cinnamon and sugar
L Tuna macaroni
D Out for dinner

Sun

B Pancakes with peanut butter and maple syrup
L Chips and cheese
D BBQ chicken on rolls, oven fries, veggie

Desserts/Snacks
  • Popcorn
  • Pretzels (I don't buy these often - so they're a special treat!)
  • Carrot sticks with peanut butter dip
  • Muffins
  • Cupcakes
Casey is still working two full-time jobs. He is very tired most of the time because of how little sleep he is getting. We are praying that the training period ends soon so that he can end his one job and get back to a more normal life. As our budget is still fairly tight and my time is often spent catching up on the extra laundry (both Casey's jobs require uniforms), I am giving myself some "Mama grace" and letting the kids eat cold cereal for breakfast a few days a week. They have rarely had cold cereal so they think its the best breakfast ever. Makes me wonder why I go to all the bother of making a homemade breakfast - but I only wonder for a moment ☺.
