Homemade Pumpkin Muffins (GF/DF)


It's that time of the year where every time we turn around we're reading about another pumpkin recipe. So why not add another to the galore of pumpkin recipes "out there?" I am going to share with you a "makeover" of one of my favorite gluten free recipes that just so happens to be Pumpkin Muffins. These delightful muffins make for a great breakfast. They're mildly sweet and filling, not to mention they are pretty healthy! My kids gobble these up fast so I hope they hit the spot with your family too.


I originally found this recipe at none other than the amazing bakers at King Arther Flour. I really enjoyed this recipe made exactly the way it is presented on their website but I ended up making several changes in an attempt to make these a healthier breakfast option. Some of the substitutions I've made include using whole grain flours instead of an all-purpose mix, decreasing the sugar while using a less-refined sweetener, and switching out the butter for oil (this was just because my son is allergic to dairy - otherwise I'd have used the butter!).

Homemade Pumpkin Muffins

3 large organic free-range eggs
2 T. blackstrap molasses
1 (15oz) can organic pumpkin
1 c. brown rice flour
3/4 c. sorghum flour
3/4 c. organic Sucanat
2 t. aluminum-free baking powder
1/2 t. xanthan gum
1/2 t. sea salt
1 t. gluten free vanilla extract
2 t. pumpkin pie spice
1/2 c. grapeseed oil

In a large mixing bowl, whisk together the eggs, molasses, vanilla, pumpkin, and oil. Add in the Sucanat and mix well. Measure in the brown rice flour, sorghum flour, baking powder, xanthan gum, salt, and pumpkin pie spice and mix until combined. Spoon evenly into oiled or paper baking cup lined muffin tins. Bake for 25 minutes (or until a tooth pick inserted comes out clean) for regular-sized muffins or 11-12 minutes for mini-sized muffins.
