First "Weekly Menu" of 2012

Happy New Year's Eve! Many people are planning on staying up late to see the New Year roll in at 12am as well as attending parties and setting their New Year resolutions.
We have far less interesting plans. Casey will be at work until 8pm so we're planning a late dinner of finger foods for just the two of us. We'll probably play his new mini table top Foosball game my mom bought him and then head off to bed long before 12am! And, we are okay with this! We count it a privilege to be in bed by 10pm!

I am so excited for and refreshed somehow in the process of writing my first menu for 2012! Perhaps its made special by Sunday being January 1, 2012 and that happens to be the first day of the week on my menu. Writing a weekly (monthly, bi-monthly, or whatever works for you, in other words!) menu is the best way to make sure I have good quality and purposeful ingredients on hand to create healthy and wholesome foods for my family throughout the week. Otherwise, its a scramble to come up with a meal or a temptation often too strong to overcome to eat out when in a hurry. I am much better than I used to be about making wholesome meals and I am pursuing replacing more and more processed foods we consume with whole foods as I learn more.

B~ Eggs and bacon
L~ Leftovers and fruit
D~ Beef and potato soup and bread
Monday 1/2
B~ Eggs and waffles
L~ Mexican rice and fruit
D~ Oriental chicken over rice and veggie
Tuesday 1/3
B~ Fruit and yogurt smoothies
L~ Bean and cheese quesadillas and fruit
D~ Oven fried chicken, fettuccine alfredo, and veggie
Wednesday 1/4
B~ Peanut butter toast,
L~ Baked chicken, fruit, and fries
D~ Meatballs and gravy, mashed potatoes, and veggie
Thursday 1/5
B~ Eggs and muffins
L~ Leftovers
D~ Ham and bean soup and cornbread muffins
Friday 1/6
B~ Sausage and waffles
L~ Turkey macaroni and cheese and fruit
D~ Corned beef roast, sauerkraut, cheesy potatoes, and veggie
Saturday 1/7
B~ Fruit and yogurt smoothies
L~ Bacon and cheese potatoes
D~ BBQ chicken, cheesy rice, and veggie
