Gluten Free Baked Oatmeal


To follow up from our topic of gluten free breakfast options, I would like to share with you a recipe which I adapted from my mother's Baked Oatmeal recipe. I don't know where she got the recipe but she made it for us as kids and I always have enjoyed it. However, our family can't have the gluten which is often present in regular oats and Casey and Logan are eating dairy free so I decided to change it up a bit.

Here is the recipe with my adaptions:

1 1/2 cups quick oats
1/2 cup sugar
1/2 cup milk
1/4 cup butter, melted
1 egg
1 teaspoon baking powder
3/4 teaspoon salt
1 t. vanilla

Mix all together in a mixing bowl. Spread evenly in a greased 13 by 9 baking dish. Bake at 350 degrees for 25-30 minutes.

Adapted recipe:

1 1/2 cups gluten free oats (if you use old-fashioned oats just pulse briefly in a blender)
1/2 cup sugar - whatever kind floats your boat
1/2 cup unsweetened almond milk
2 T. coconut oil
2 eggs
1 teaspoon baking powder
3/4 teaspoon Real salt
2 teaspoons vanilla
2 apples - cored and chopped in the blender; I left peel on

Mix all together in a mixing bowl. Spread evenly in a greased 13 by 9 baking dish. Bake at 350 for 30 minutes.

My mom often serves her baked oatmeal with spiced, cooked apples. I've served the plain version of the baked oatmeal with apple sauce on top to my kids and they loved it. You could also use a different sweetener choice such as honey or reduce the amount of sugar. You could serve it with milk or yogurt. Have fun with it and transform the dish into exactly what thrills your family in the morning!

  1. Oatmeal used to be my kids' go-to breakfast until they got tired of it! This is a perfect way to revive an old favorite. How long does it keep?

    1. Hi! We eat oatmeal several days a week here throughout the year so variety is a must! Honestly, I don't know because it doesn't last long for us. We eat about 1/2 - 2/3 of the pan for breakfast (when its just the kids and me) and the rest is usually eaten at morning snack or lunch. However, I don't see why it wouldn't keep just fine in the fridge for a few days.
